Carrot-Brownies with Strawberries

It’s been a long time that I did a food-post. So I wanted to bake something againg for Easter. Last year it was a traditional carrot cake. This time it’s an unknown Easter-recipe. Carrot Brownies with meringue, strawberry cream and strawberries. Perfect for those who love the combination of chocolate and fresh strawberries. The ones of you who doesn’t like meringue, can leave it off. I’m not a fan of it, but I didn’t want to make an incomplete recipe. But now there are also these carrots in the brownies. It maybe sounds strange but it’s quite normal, because the carrots have a certain sweetness. In addition, I must say that the recipe should have been easy. But it was not. It took me a few hours and nerves. My carrot cake was much less time consuming. Who still don’t know what to bake on Easter, have two recipes to choose from. :)

Carrot Brownies with Strawberries

total time: 120 – 180 min | level: normal | servings: 16

200 g almonds
350 g carrots
100 g dark chocolate 70 %
150 g butter
100 g flour
400 g brown sugar
3 tbsp cocoa
2 tsp baking powder
1 tsp vanillin sugar
4 eggs
2 egg whites
13 tbsp sugar
1 tsp starch
1/2 tsp vinegar
350 g strawberries
500 g creme fraîche
butter and flour for a baking tin
powdered sugar
baking paper



  1. chop the almonds coarsely with a knife, roast in a pan without fat
  2. melt 150 g butter in a pot, then let it cool off
  3. peel, wash grate coarsely the carrots
  4. chop the chocolate coarsely
  5. preheat oven (electric: 175 ° C / air circulation: 150 ° C)
  6. grease rectangular baking pan and dust with flour
  7. mix 100 g flour, brown sugar, cocoa and baking powder
  8. stir 4 eggs in a bowl with a mixer
  9. put vanilla and melted butter to the eggs
  10. add flour mixture and mix it together
  11. put carrots, chocolate and almonds one by one to the mixture and fold in
  12. spread the dough in the baking pan
  13. put it in the oven for 30-35 minutes, then take it out and let it cool


  1. switch down the oven (electric: 150 °C / air circulation: 125 °C)
  2. cover the baking sheet with baking paper
  3. beat 2 egg whites until they’re stiff, add 4 tbsp sugar
  4. mix 5 tbsp sugar and starch, add vinegar
  5. continue beating until the mass is stiff and shines
  6. spread it only on the half side of the baking sheet
  7. bake in the oven for 25 minutes, until the surface is crispy and the bottom can be unstick easily
  8. take it out and let it cool off
  9. put new baking paper on the meringue and put a cooling rack on it
  10. press the baking sheet and the cooling rack lightly together and turn around
  11. meringue must lie on the cooling rack
  12. remove baking paper and let the meringue cool off


  1. wash, clean and finely dice 250 g strawberries
  2. sprinkle 2 tbsp sugar on it and let it soak in a bit
  3. mix briefly 2 tbsp sugar and creme fraîche with a mixer
  4. slightly squash strawberries with a fork, fold it in the creme fraîche
  5. put 3/4 of the creme on the finished brownies
  6. My tip: put the brownies with the cream for 1 hour or longer in the fridge, so they don’t fall apart when you try to take them off from the baking tin


  1. break the maringue in (big) pieces, spread them all over the brownies
  2. cut the brownies in pieces and take them off from the baking tin
  3. put the restover of the creme like blots on the brownies
  4. decorate with the restover of the strawberries

    I usually eat breakfast at home. however although i like to eat soup or other dishes. I often eat cake in the morning because i have less time to prepare. thanks for sharing. great recipe. yum ~!

    Love your pics, looks delicious! But I don’t think I’ll try it since it took you a few hours to make lol. The strawberry creme sounds yummy, I will try that on a vanilla or strawberry cake though : )

    I had never thought of combining carrots and strawberries together but I like the sound of it as carrots give an additional crunch.

    It’s so colorful and beautiful lol. I’m not good at baking at all. But I never hear of mixing carrot with chocolate that’s interesting !

    Looks delicious and yummy. I must say combining carrot and strawberry is intriguing. I have never had something like this before. Not that I will prepare this because I live alone and the most I do now when it comes to dessert is taste. Still, if this was in front of me, I would definitely introduce this to my mouth.

    It sounds delicious, I hate carrot but I like carrot cake and I am imagining this tastes similar, but with the merengue and the strawberries on top, which should make it really tasty.

    I like this recipe. Have a quick question? What’s the substitute for creme fraîche? I don’t think I’ve ever seen that or heard that before.

    This looks delicious, I will be trying it before I go back to college. I never would have thought to combine carrot with strawberry!
